What it is
Stir-fried rice noodles with egg, tofu, bean sprouts and shrimp in a tamarind sauce, finished with peanuts and lime. Sweet and tangy rather than spicy.
How to order it
Pad thai goong is with shrimp. Add chili flakes and sugar at the table to taste.
